Because it's an Irish Gaelic spelling. Aoibh is actually pronounced more like EE-V (Eve) and Aoibhé is EE-vuh (Eva). In Irish Gaelic the letters Ao is called a long dipthong pronounced like EE as in Tree. The letters bh (considered 1 letter in Irish gaelic) is an aspirated consonant. Which makes a broad (W) or slender (V) sound. It is considered a slender consonant because an i and an é are the closest vowels. Giving the consonant bh a V sound. The é at the end is pronounced like UH like an English A at the end of a name. So you have
ao=EE bh=v é=uh giving you Eva.

This is my beautiful daughter's middle name. I read a sweet story about a baby Aoife, had to use it. I would have loved to make it her first name, but worried about complicating the pronunciation for others. Nonetheless, we adore her and her name.
